- Chop potatoes, capsicum, tomatoes to medium sized. Crush ginger and chili.
- Take a kadhai, add oil and heat properly, then add cumin seeds, As it splutters add asafoetida, ginger and chili paste.Fry for few seconds then add potatoes.Mix it all nicely and cook for 3 to 4 minutes on low heat.Cover the kadhai with a lid.
- Now add capsicum and mix well, Add all the masala salt, turmeric powder, red chilli powder, coriander powder, garam masala powder. Sprinkler little 1 to 2 tablespoon water.Let the potatoes and capsicum cook on low heat till they are cooked well.
- Now once the potatoes and capsicum are cooked properly,add tomatoes.Let the tomatoes cooked well and soft.Mix it all nicely.Cover the kadhai.Let the juicy tomatoes get cooked well and mixed nicely.Stir and check in between.
- Once it's done switch off the heat. Cover the kadhai and let it be for 5 to 7 minutes.
- Transfer the sabzi in serving bowl and garnish with fresh coriander leaves.
- Serve hot with paratha,chapati or puri
