  1. For chana daal preparation
  2. Firstly, in a large bowl take 1 cup chana dal and soak for 3 hours with enough water. few chana dal just need ½ hour of soaking.
  3. Now in a pressure cooker, place a vessel pouring water at the bottom of cooker.
  4. Transfer the soaked chana dal along with ¼ tsp salt, 3 cup water and 1 tsp oil.
  5. Pressure cook on medium flame for 5 whistles.
  6. Once the pressure settles down, open the cooker and drain off the water. allow resting for 30 minutes, making sure to drain off all the water from chana dal.
  7. Take cooked chana dal in the kadai and add 1 cup Sugar or jaggery
  8. Mix well until the jaggery melts. continue to mix by mashing the chana dal.
  9. Cook until the mixture thickens and starts to separate from the pan.
  10. The mixture will start to hold the shape. cool the mixture slightly and transfer the mixture to the mixi.
  11. Also, add ¼ tsp jaiphal powder and ¼ tsp cardamom powder.
  12. Blend to smooth paste without adding any water.
  13. Now place a sieve in a large bowl, transfer the prepared mixture.
  14. Press and pass the chana dal mixture through a sieve. this helps to prevent any chana dal to be leftover.
  15. Now mix and form a dough. puran is ready.
  16. Boil spinach leaves and carrot with a pinch of salt in water for about 10-15 mins.
  17. Once cooled, grind carrot and spinach separately with a little water.
  18. Mix 1 cup of wheat flour, salt and carrot paste to knead orange dough. Keep aside.
  19. Mix 1 cup of wheat flour, salt and spinach paste to knead green dough. Keep aside.
  20. Knead wheat flour with salt and water for the white dough.
  21. Now take small of each dough and big chapati one by one (means first u make Plain flour chapati after that palak chapati after that Carrot chapati) keep top on another and roll it properly and cut in medium size round.
  22. After that take pinch a ball sized dough and flatten well. - also, pinch a ball sized puran (chana dal stuffing)
  23. Place the puran in center of dough. - stuff the puran and pinch off the excess dough securing tight.
  24. Furthermore, dust the ball with wheat flour and flatten with hand. - roll in one direction making sure the puran poli is thin.
  25. Now put the rolled puran poli over hot tawa. - allow roasting on medium flame until it puffs up.
  26. Grease oil/ghee and flip over and cook both sides pressing slightly. - finally, serve puran poli with ghee.
