- Provide 13-14 baby potatoes
- Use 1 cup onion tomato puree
- Take 1 dry red chilli
- Take 1 stick cinnamon
- Provide 1-2 green cardamom

- Take 4-5 tbsp oil
- Provide 1/4 tsp asafoetida
- Take 1 green chilli splitted
- Take 1 red chilli splitted
- Prepare 6-7 garlic minced

- Take 2 tsp red chilli powder
- Prepare 2 tsp coriander powder
- Provide 1/2 tsp garam masala
- Get 2 tsp curd
- Prepare 1 tsp kasoori methi
- Prepare 1/2 tsp sugar
Instructions to make Dum aloo:
- Wash baby potatoes. Pressure cook them. Once boiled and cooled peel off the skin of potatoes.get the onion tomato puree ready.
- Heat up a pan. Add oil. Once Hot add oil all boiled peeled potatoes. Shallow fry them until golden brown. Remove them in a dish.
- Add all whole spices to the remaining oil. After the spluttering add asafoetida add minced garlic and ginger add splitter red chilli too. Saute for 1 minute.
- Now add onion tomato puree.add salt and sugar too. Saute until cooked and oil separates.add all spieces powder.
- Saute for 1 minute.add curd and mix well. Add all baby potatoes and a glass of water.add garam masala and kasoori methi. Cover and simmer for 2-3 mins. Serve hot sabji with parantha.
To make this dish, potatoes are fried and then soaked in the spicy aromatic gravy. Dry the potatoes on a cloth and heat the ghee or oil.
