  2. Take 1 onion
  3. Provide 1/2 cup tomato puree
  4. Prepare as required Oil
  5. Provide 1 bay leaf

  8. Get 2 tbsp cashews
  9. Get 1 piece ginger
  10. Get 14-15 clove garlic
  11. Use 1/2 tsp Turmeric

  13. Use 1 tsp coriander powder
  14. Use 1 tsp cumin seeds
  15. You need 1 tsp garam masala
  16. Take as needed Kasuri methi, salt & coriander leaves
Instructions to make Dum aloo:
  1. Boil potatoes till 70%.peel & prick with fork.sprinkle salt, turmeric & red chilli powder, toss & shallow fry in 2tbsp oil.
  2. Remove them & add 1tbsp oil, add bay leaf, cloves, cardamon,cumin, Onion's, ginger, garlic & cashews….Fry for few min.,allow to cool & make a paste without water.
  3. Heat again oil&1tbsp ghee, add the paste, cook till oil separate,then tomato puree & little water,again cook till oil separates.Then add turmeric, red chilli powder, coriander powder, cumin powder, mix.Lower the flame & add 1/2 cup beaten curd.
  4. Mix, add crushed kasuri methi oner it & adjust the salt.
  5. Add water according to the gravy,when boils cook for 5 min &add potatoes & cook covered till done.Garnish with coriander leaves.

To make this dish, potatoes are fried and then soaked in the spicy aromatic gravy. Dry the potatoes on a cloth and heat the ghee or oil.
