  1. Provide 2 tsp Kashmiri red chilli powder
  2. Get 10-12 cashew nuts
  3. Provide 1 pinch kasuri methi
  4. Get 1 tbsp dhaniya jeera powder
  5. Use 1 inch stick ginger
  6. Use 4 big onions roughly diced
  7. You need 8 big tomatoes pureed
  8. Get 7-8 garlic cloves
  9. Prepare 1 bowl baby potatoes fried
  10. Get 1 tsp garam masala
  11. Get 1 tbsp ghee
  12. Get 1 tbsp oil
  13. Use 1 bay leaf
  14. Provide 1 inch stick cinnamon
  15. You need 1 tsp jeera
Steps to make Dum Aaloo:
  1. In a bowl take water add red chilli powder, dhaniya jeera powder, cashew nuts, kasuri methi & ginger for atleast 20min.
  2. In a pan take oil & ghee, once it becomes hot add jeera, cinnamon stick, bay leaf & onions & cook it till onions become translucent, then add garlic cloves & again cook till onions become brown, then switch off the gas let the mixture cool & then remove the bay leaf & puree it.
  3. Meanwhile par boil the baby potatoes then deep fry them & keep aside.
  4. Blend the soaked spices & cashew into a fine paste.
  5. Now take a pan, add the pureed onion & spices paste mix well & cook for 5min, then add tomato puree mix well, add little water if needed & cook it for 10min over low flame.
  6. Then add garam masala powder, fried potatoes & cook well for 8-10min.
  7. Then switch off the gas, garnish with cream & coriander & serve.
