The ingredients needed to cook Vella Kozhukattai (Sweet Modak):
  1. You need 1 Cup Rice Flour
  2. You need 2 Cups Water
  3. Provide 1 Cup Coconut Grated
  4. You need 1/2 Cup Jaggery Grated
  5. Take 1 Pinch Cardamom
  6. Get 1 Teaspoon Ghee
Steps to make Vella Kozhukattai (Sweet Modak):
  1. To prepare the outer cover: Boil 1 cup of water in a vessel. When the water boils, add rice flour to it and mix well till no lumps remain.
  2. Turn off the flame and knead the dough once more using your hand till it is smooth enough. Prepare small dough balls out of it.
  3. To prepare the filling: Boil 1 cup of water in a vessel. When the water boils, add powdered jaggery to it and allow it to melt.
  4. Sieve the jaggery mixture through a muslin cloth.
  5. Heat the strained jaggery mixture till it thickens. When it thickens, add grated coconut to it and mix well. Add a pinch of cardamom powder as well.
  6. Keep on sauteing till the coconut jaggery filling is thick enough. Add a teaspoon of ghee to it and mix well. Prepare small balls out of the filling
  7. To prepare the kozhukattai: Take a dough ball. Grease your finger tips with oil. Using a little water and oil, prepare a depression and keep on shaping it till it appears like an earthen lamp. (see pic)
  8. Drop a filling ball in the depression and gently fold the ends together and close it towards the top of the filling.
  9. Shape the tip such that it appears pointed (see pics)
  10. Repeat the same for the other balls of dough and filling. When you are done with shaping the modaks, steam the modaks in a steam cooker for 20 minutes.
