- Ingredients
- In a big bowl, add semolina, melted Ghee and vegetable oil. Using your hand mix it. Make sure semolina is covered with ghee/butter and oil.
- Cover the bowl and leave it overnight. - Next day semolina will be soften. Now, add flour, powdered sugar, powdered milk, baking powder, nutmeg and pinch of salt to the semolina.
- Mix until all ingredients are combined together.In next step, stir in sugar and yeast to lukewarm water. Wait for about 10-15 minutes, until surface of mixture becomes foamy.
- Now, add milk, rose water and yeast mixture to the semolina. Use your hand and combine all ingredients together
- And knead it until you have a soft dough like. Cover it and let to rest for 1 hour. After an hour, give ball shape to the ma’amul dough and set aside.
- In the meantime, we prepare the fillings. You can have one filling or collection of different fillings with nuts, date, or fig.
- Blend pitted dates together in a food processor. Add oil and spice. Mix until smooth. Roll it into small balls.
- Mix pistachio powder with sugar, cardamom and water. Make a paste and then give small ball shape to pistachio paste.
- Mix chopped walnuts with sugar, water and cinnamon. Make a paste and then give small ball shape to the paste.

- Now fill the log with one of fillings and seal the dough.
- Bring two ends of the dough to each other and make a ring shape.
- Or Put the filled dough inside the Ice cream spoon and bang it against the counter.
