- Take broad and thick bottom pan or non- stick kadhai, pour milk in it and boil over medium flame. - Meanwhile soak the almonds and pistachios in hot water for 20 mins. Then peel them and chop them into the slices. Set aside.
- When milk starts to boil reduce the flame to low. - Stir at regular intervals of 2-3 minutes but not continuously.
- When the layer of malai or cream appears on the top of the milk, shift to towards the side of a pan with the help of the spatula. - In between scrape small cream chunks which are collected on the side of the pan.
- Follow the same process until milk is reduced to 1/3 of it's original quantity. - Now add sugar, sliced almond – pistachios and saffron, stir well. - Cook for 2 minutes.
- Finally add cardamom powder, stir and turn off the flame.Transfer into a serving bowl and garnish with some roasted chopped dry fruits
- Let it cool down completely and then refrigerate it for 1- 2 hours before serving.
