Instructions to make Pickle Pig:
- Place the cheese, black pudding, shallot, potato and sauce in a bowl and mix together. Dust hands with flour and mould into cylinders. There should be enough to make 10 croquettes. Dust the croquettes with flour, dip in the beaten egg and then the panko breadcrumbs to coat completely. Heat the oil in a frying pan over medium heat. Shallow fry the croquettes, turning on all sides until crisp and golden brown and drain on absorbent paper.
- Whisk the dressing ingredients. Mix all the salad ingredients together, drizzle with the dressing and serve alongside the croquettes.
