Steps to make Mix Veg Khichdi:
  1. Take a mixing bowl,add rice & dal, mix it well, wash it, soak in water for 1/2 hr, strain it, keep aside.
  2. Fry all the veggies in oil, keep aside.
  3. Take a pressure cooker, add ghee, heat it, moderate the heat, add tejpatta & dalchini, saute it for a while.
  4. Now add hing & zeera, let it splutter.
  5. Add green chillies & ginger, saute it for a while.
  6. Now add tomato, stir fry it for a while. Do not over cook it.
  7. Add red chilli powder, give a stir.
  8. Add all the veggies, stir fry it for a while.
  9. Now add khichdi into the masala, stir fry it for a while.
  10. Add garam masala powder, salt & sugar, mix it well, increase the flame.
  11. Stir fry khichdi till grains aur separated.
  12. Add water accordingly so that khichdi does not become mushy.
  13. Place the lid, give 2 whistles.lower the flame, cook it for 8-10 min.
  14. Switch off the flame, allow it to depressurize. Open the lid after a while.
  15. Take out in a serving bowl, keep aside. Take a tadka pan, add ghee, heat it.
  16. Add laung & dry red chilli, cook it till brown, add in the cooked khichdi, do not mix it.
  17. You can add chopped dhania patta (optional)
  18. Have it with Raita, Salad, Papad or Chutney.
