- Soak the sabudana overnight. It's always best if you soak it overnight.
- Rinse the sabudana under water atleast 3-4 times until water turns clear to get rid of the starch.
- Heat oil in a pan on medium heat. Once the oil is hot, add peanuts and sauté them for 1-2 minutes. Once it's done, take them out and keep it aside.
- Add cumin seeds and let them sizzle for few seconds. Then add diced potatoes and cook for 2 or 3 minutes.
- Add the tomato paste and little bit of salt. Mix well.
- Now add the sabudana, grated carrot, salt, red chilli powder, turmeric powder, coriander powder, garam masala, Black pepper powder. Mix well.
- Cook for few minutes. Stir it for 2-3 times. Do not cook it for a long time else it will become sticky.
- Remove pan from heat. Add fresh coriander leaves and toss them well.
- Your Sabudana Khichdi is ready. Serve hot with curd.
