  1. Boil the milk in a heavy bottomed pan
  2. Whisk and add the yoghurt when the milk begins to boil
  3. Let the milk curdle. if it doesnt after 2-3 mins add some more yoghurt
  4. Add the ice cold water or ice cubes into the curdled milk and leave aside for 3 mins
  5. Line the inside of a seive or a colander with a thin cloth
  6. Pour the curdled milk into it and hanf the cloth for 45 mins, so that all excess water and whey are drained out
  7. Add sugar and water into a big pan, big enough to allow the rasgullas to increase twice in size
  8. Bring the sugar and water to a boil.
  9. Add cardamom powder and rise syrup into the sugar water mixture
  10. Knead the cottage cheese after hanging for 45 minutes. keep kneading until it is smooth. donot over knead it or else it will turn greasy and soggy.
  11. Form small balls out of the dough and release them into the boiling sugar syrup
  12. Cover with a lid and boil them for 10mins
  13. In every 3 minutes, uncover the lid and keep turning the balls gently to allow puffing. the balls sink when they are double the size and are fully cooked
  14. Remove the pan from the stove immediately to stop further cooking
  15. Garnish with saffron strand and serve warm
