The ingredients needed to prepare Rasiya:
- Prepare 1 litre full fat milk 1 cup rice 2 tablespoon ghee 1/2 teaspoon cardamom powder 1/2 teaspoon ginger powder (optional) 3/4 cup jaggery
- Get 1 tablespoon chopped almonds 1 tablespoon chopped cashew nuts 1 tablespoon chopped pistachio and About 20 raisins
Instructions to make Rasiya:
- Wash rice and soak for at least 1/2 an hour.
- In a mixture coarsely grind the rice.
- In a pan add ghee and roast dry fruits - almonds, cashew nuts, pistachio and raisins. - Once the nuts are roasted add the coarsely ground rice. Stir rice for a minute or so until ghee is coated. Add milk and let the rice simmer and allow the rice to be cooked. Keep stirring rice.
- In a pan add jaggery and half cup water and bring it to boil
- Once rice is half cooked, add jaggery water and continue cooking.Cook until rasiya thickens. Add cardamom powder, ginger powder and dry fruits.
- Garnish with nuts and saffron.
