The ingredients needed to make Ted's Chili:
  1. You need 2 lb ground beef
  2. Prepare 1-2 lb chuck roast (cubed) or stew meat
  3. Use 29 oz can diced tomatoes
  4. Take 15.25 oz can kidney beans
  5. Take 15.25 oz can white beans
  6. Get 15.25 oz can black beans
  7. Prepare 3 large bell peppers (diced) assorted colors (optional)
  8. Get 1 large onion (diced)
  9. Provide 8 cloves garlic (crushed and roughly chopped) or 6 T. minced
  10. Use 1/4 cup worcestershire sauce
  11. Take 4 T. chili powder
  12. Prepare 2 T. paprika
  13. Get 2 T. oregano
  14. Get 1 T. ground black pepper
  15. Prepare Salt (to taste)
  16. Prepare 1 lg. bottle V8 juice
  17. Take 1 T. liquid smoke (optional)
  18. Get 2 T. cocoa powder or 1/4 cup dark chocolate (optional)
  19. Take Juice of one lime (optional)
Instructions to make Ted's Chili:
  1. Brown the ground beef in a skillet, drain grease and add to crockpot or large stew pot.
  2. Sear the cubed meat until browned on the outside and add to the pot. NOTE: does not have to be cooked through
  3. Strain and rinse the beans and add to pot. Also add the canned tomatoes plus the juice.
  4. Add diced onions and half of the diced peppers to the pot. Then add the rest of the ingredients. Wait until an hour before serving to add the rest of the peppers. NOTE: waiting to add peppers helps to keep their texture…this is optional
  5. Top off your crockpot with V8 juice or add about half of the bottle if using an oversized stew pot. Simmer the mixture on low for a few hours. The chili should naturally thicken and the stew meat will become tender.
  6. NOTE: For spicier chili, feel free to add a small can of chipotle peppers or diced jalapeños. Other optional ingredients I like to occasionally add include sweet corn, poblano peppers, diced carrots, etc.
