The ingredients needed to prepare Aloo Bonda:

- Get 3 potatoes boiled peeled & mashed
- Provide 1 onion finely chopped
- Prepare 2 green chillies finely chopped
- You need 1/2 inch ginger crushed
- Take 6-7 garlic cloves crushed
- You need 2 tsp oil
- Take 1 tsp panch phoron
- Use 1/4 tsp turmeric powder
- Use 1/2 tsp chilli powder
- Get 1/2 tsp cumin powder
- Use 1/2 tsp coriander powder
- Get To taste salt
- You need 2 tsp chopped coriander leaves
- Get For Batter
- Take 1 cup besan
- Use 1 pinch turmeric powder
- Use To taste salt
- Take 1 pinch baking soda
- Use as needed Oil for deep frying
Instructions to make Aloo Bonda:
- Heat 2 tsp oil in a pan. Add panch phoron to splutter. Then add chopped onion and saute till onion turns translucent. Next add crushed ginger & garlic and finely chopped green chilli. Saute till raw aroma of both ginger & garlic goes away.
- Now add turmeric powder, chilli powder, cumin powder, coriander powder, salt and coriander leaves. Mix well. Next add mashed potato and saute for a minute or two. Switch off the flame and let this potato filling cool down at room temperature.
- Then make equal lemon sized balls out of this potato filling. Keep aside.
- To make besan batter take 1 cup besan in a mixing bowl. Add turmeic powder, baking soda and salt. Add 1/3 cup water or as required. Whisk to a smooth and thick batter.
- Now heat oil in a kadai or frying pan over a medium flame. Once hot, dip the potato balls in the batter and carefully place into the hot oil. Deep fry the bondas until light golden or golden. Once done, remove and place on a kitchen paper to drain excess oil.
- Serve aloo bonda hot with any sauce or chutney.
