The ingredients needed to make Tikkar Paratha:
  1. Prepare 1 cup makai flour/cornmeal
  2. Provide 1 cup wheat flour
  3. Provide 1 cup besan/gramflour
  4. Prepare 1 onion finely chopped
  5. Use 3 tomatoes finely chopped
  6. You need 1/2 cup chopped coriander
  7. Provide 1/2 tsp chilli powder
  8. Provide 1/4 tsp turmeric powder
  9. Take 2 green chillies
  10. Provide 1/2 inch ginger
  11. Prepare 6 cloves garlic
  12. Prepare 1 tsp achaar masala/pickle masala
  13. Prepare 1 tsp salt
  14. Use as needed Oil to fry parathas
Steps to make Tikkar Paratha:
  1. In a mortar and pestle grind green chillies and ginger… then add garlic cloves and roughly crush them… keep aside
  2. Finely chop all the veggies (onion, little bit of onion stem, tomato and coriander)
  3. In a big bowl add all the flour and red chilli powder, turmeric powder and salt
  4. Add all the veggies as well along with 2 tbsp oil and achaar masala. Mix all well.. if required add 1 tbsp water and mix to make a dough.
  5. Make small balls and roll to make round parathas… top it up with chopped tomato pieces and some chopped coriander… sprinkle a little dry flour and roll once again.
  6. With the help of a knife release the paratha from all sides of the rolling board and place the paratha on a hot tawa… then on medium low flame let it cook from both sides
  7. Then add 1 tbs of oil and fry from both sides till golden… serve hot with achaar or raita.
