  1. You need 1/2 kg matumbo
  2. Prepare 2 tomatoes
  3. You need 1 onion
  4. Take leaves dhania

Steps to make Matumbo Stew:
  1. Chop the matumbo into smaller pieces and wash well. boil them in a pressure cooker for one hour. If you are using jiko or gas boil for 3.5 hrs. Until tender
  2. Chop the tomatoes, onion and coriander leaves in different bowls
  3. In a cooking pan add oil and heat till hot and add onion. Let then cook till golden brown then add tomatoes and stir to mix.
  4. Then add the boiled matumbo and stir to mix. add a half cup if water as soup and stir. Then add salt and curry powder then stir again. Cover to simmer for 10 minutes.
  5. Once cooked add coriander leaves and stir then cook for 2 minutes. Remove from heat and serve with Ugali.
