- Prepare 1 sprig curry leaves
Instructions to make Veg Yakhni Pulao:
- In a non stick kadai heat 1 tbsp ghee/butter and add bay leaf, cinnamon, cloves, cardamom, cumin seeds, pepper, fennel and saute.
- Add in onion and add ginger garlic paste till the raw aroma disappears.
- Further add in boiled vegetables and saute for two minutes.
- Now add curd and saute low flame. Additionally add prepared veg stock 2 cups and mix well.
- Now add basmati rice and mix well and 2 tsp soaked Kesar in milk and mix well.
- Further add fried onion and cover and simmer for 20 minutes or till rice gets cooked completely.
- You can also pressure cook for two whistles on medium flame.
- Finally serve veg Yakhni pulao with curd or curries.
