- Take 300 gm Basmati rice
- Take 1 Cinnamon stick

- Provide 1 cup wheat flour for coating the pan
Steps to make Kolkata style Chicken Biryani:
- Overnight marinate the chicken with salt,ginger garlic paste,3tspn oil, curd,red chilli, turmeric, cumin& coriander powder.
- Soak rice in water for 15 mins & then boil it with salt, lemon juice,star anise, cinnamon stick, jayatri, cardamom & cloves.
- Heat oil, add salt & red chilli powder & fry eggs & potatoes in it.
- After fry take out from oil.
- Add chopped onion & ginger garluc paste in the same oil & saute it for a while.
- Add all spices.
- Add marinated chicken & mix it well with spices.Add some hot water.Cover it & let it cook till boil.
- Add boiled & fried eggs & potatoes in it to mix with spices.When spices mix with it properly, take out eggs & potatoes from gravy.
- Now assembling time.Take a heavy bottomed vessel.Put cooked chicken in it.
- Place one layer of half cooked rice on it.
- Add biryani masala, ghee, birista, fried eggs & potatoes over it.
- Cover this layer with rice again.Sprinkle saffron mix milk, rose water, keora water & meethi aatar.Make a wheat dough mixing with water.Cover the vessel with lid & seal it with the wheat dough.
- Cook it in low flame for at least 20 mins & then switch off the flame.Keep rest for another 15 mins.
- After that take a plate & serve it with salad & raita.
