- Get 1 Medium Cauliflower (Cut into small florets)
- You need 5 tbsp Oil
- Provide 1 cup Onion (Chopped)
- Use 2 tsp Ginger Garlic Paste

- Provide 4 tbsp Curd
- Prepare 2 tbsp Achari Masala
- Get 1 tbsp Kashmiri Red Chilli Powder

- Take 1 tsp Dry Mango Powder
- Prepare 2 tbsp Coriander Leaves (Chopped)
- Provide Achari Masala Recipe:
- Take 16-18 Kashmiri Dry Red Chillies
- Get 2 tbsp Coriander Seeds
- Use 2 tsp Onion Seeds
- You need 6 tbsp Fennel Seeds
- Get 4 tbsp Mustard Seeds
- Prepare 1 tsp Fenugreek Seeds
- Use 6 tbsp Cumin Seeds
- You need 4 tbsp Salt
- You need 1 tsp Turmeric Powder
- Prepare 1 tsp Hing
- Provide 4 tsp Dry Mango Powder
Instructions to make Achari Gobhi:
- Heat 2 tablespoons oil in a pan. Add the washed and drained gobhi florets and saute till slightly brown. Remove from the pan and set aside.
- Add the remaining oil in the same pan. Add the onions and saute till slightly brown.
- Add the ginger garlic paste and saute for a minute.
- Add the tomato puree and curd and saute for a minute.
- Add the achari masala, red chilli powder, salt and half cup of water and saute for a minute. (Since I was putting kashmiri red chilli powder, dry mango powder and salt in the recipe, I deleted it when making the achari masala). You can prepare the achari masala as per the recipe given above and store it and use when required. You can use it in dal and curries too.
- Add the fried gobhi. Cover and cook for about 10 to 12 minutes.
- Add lemon juice and dry mango powder. Mix it well.
- Garnish with coriander leaves.
- Serve hot with rice, dal or roti, paratha, naan etc.
