  1. Wash and soak tuvar dal in water for 30 minutes. Then cook in pressure cooker.
  2. In a pan heat oil and ghee. Add cumin seeds. After it turns brown add asafoetida, dry red chillies and curry leaves. Add chopped onion and tomato. Add ginger garlic paste and saute until tomato softens.
  3. Add boiled tuvar dal and required amount of water. Add salt, turmeric powder, red chilli powder and garam masala powder. Mix well and cook for 7-10 minutes. Add chopped coriander leaves. At the time of serving do tadka again. In a tadka pan heat 1 teaspoon oil. Add 1 dry red chilli, finely chopped 2-3 cloves of garlic, 1 teaspoon chopped tomato and 1/2 teaspoon red chilli powder. Saute for few seconds. Pour this tadka over dal and serve with jeera rice.
  4. Wash and soak basmati rice in water for 15-20 minutes. Then cook as all grains remain separate.
  5. In a pan heat ghee. Add cumin seeds. Cook till turns golden brown. Add cloves, cinnamon piece and chopped green chillies. Add cooked rice. Add salt and mix well. Mix chopped coriander leaves and serve with dal tadka.

To make Tadka for Dal Tadka. Just before serving heat clarified butter (ghee) in a tadka pan and once hot add dried red chili. Add cumin seeds (jeera) in tadka and let them flutters. Pour the tadka on dal and serve right away. Dal tadka (restaurant style) is ready to serve.
