  15. Prepare 1 L. Full fat milk

Instructions to make Boondi with Custard Rabdi:
  1. For making boondi- in a bowl add gram flour, b.p, and milk…Whisk it well..And make lumps free batter..(batter should be of dropping consistency.. Neither thick nor thin)
  2. Heat oil/ghee in wok..(check oil before frying…If the drop floats quickly.. means oil is ready for fry..
  3. Hold a strainer above the wok..Pour batter through the strainer..Keep spreading in circular motion…Fry until crisp…(don't over fry).. drain out on a paper towel…to remove excess oil..
  4. Meanwhile prepare sugar syrup..Add sugar and water in a pan…And bring it to boil…add saffron and cardamom powder…and Cook till it reaches it's one string consistency…
  5. Add prepared boondi in sugar syrup…Then add melon seeds and pista flakes..Mix gently…till well coated in sugar syrup… Allow it to cool..
  6. Meanwhile also prepare custard rabdi…For this…Add 1L. Milk in a heavy bottomed pan..And bring it to boil… Simmer the flame and custard powder…(before adding custard powder add some Lukewarm milk in custard powder and mix well…then add in milk)…Keep stirring the milk..And collect the malai in the side that is formed on the surface…
  7. Allow the milk to boil on low to medium flame..By continue with the same procedure.. Until milk reduces to 1/3 or it gets thick in consistency.
  8. Scrape the malai from the edges and mix into the milk..Add sugar and rose essence..Mix till sugar dissolved completely..then switch off the flame..And let it cool..
  9. Now take serving glasses/Bowls…First add prepared (cool) custard rabdi..then add prepared boondi…And garnish with ur choice..(with some dryfruits..)
