Steps to make Achari Aloo:
  1. Peel and cut potatoes into 4 pieces.If baby potatoes are used, they can be cooked whole. Pressure cook 3 whistles and release steam after 2-3 minutes.Check whether potatoes are half done.Smear salt and set aside.Dry roast fennel,fenugreek, kalonji,cumin, mustard seeds and dry red chilli.Dry grind to powder and store.Heat mustard oil and fry the potatoes golden brown and nearly done.In the remaining oil,sprinkle 1/2 tsp paanch phoron (mustard,fennel,fenugreek,kalonji,cumin), dry red chilli, hing.

When they crackle,add the fried potatoes,ginger garlic paste,tomato puree,1 tsp achari masala,fennel powder,amchur powder,turmeric and red chilli powder.Add salt and sugar to taste and few fried curry leaves.Toss all and add 1 cup water and boil till masala coats potatoes. Slit green chillies and add to the potatoes.Sprinkle lemon juice.Garnish with chopped coriander and serve hot with puri,paratha or roti.
