- Provide 70 gr Keju (di parut)
- Take 1/4 sdt Garam
- You need 1 sdt Gula
- Provide 1/2 buah Jeruk nipis
- You need Sejumput Merica
- Get Sejumput royco atau penyedap lainnya
Steps to make Tuna/Tongkol Saus Putih (Bachamel):
- Bersihkan terlebih dahulu tongkol hingga benar-benar tidak ada duri, sisik dan tidak lengket. Setelah itu suwir tongkol dan taburkan garam secukupnya (jangan banyak2 tongkol gampang asin gais) serta perasan jeruk nipis (untuk menghilangkan amis) diamkan sekitar 10 menit.
- Iris bawang bombay tipis (atau sesuai selera lah) (memanjang boleh, kotak boleh. Kalau aku lebih suka memanjang hehe). Setelah itu panaskan 2 sdm minyak goreng untuk tumis bombay dan tongkol.
- Tumis bombay dan tongkol jangan terlalu lama sekedar bombay layu dan tongkol agak kesat sekitar 3 menitan lah (jangan lupa seasoning garam sejumput kaya chef2 itulohh mwehehe).
- Beralih ke saus
- Tuang susu cair (ini bisa pakai UHT atau susu bubuk yang di cairin atau SKM yang di cairin) (aku pake SKM dicairin) (perbandingan susu sama air sesuai selera yaa kecuali kalau sudah pake UHT ga pakai air) ke dalam panci.
- Larutkan 4 sdt tepung terigu hingga tidak bergerindil. (Ini larutinnya ga pakai air lagi, larutinnya bareng susu cair tadi)
- Masukkan mentega/butter (aku mentega), garam, jeruk nipis, keju, merica, dan penyedap rasa (jangan banyak2 takut asin).
- Panci berisi bahan saus letakkan diatas kompor, panaskan menggunakan api kecil, dan aduk terus (jangan ditinggal2 nanti gumpal) hingga mendidih (blukutuk, blukutuk). Emang awalnya warnanya kuning karena lelehan dari mentega tapi nanti kalau sudah mendidih dia akan berubah jadi warna putih dan creamy (tetep diaduk loh ya)
- Setelah mendidih sausnya, masukkan bahan tumisan tadi dan jagung ke dalam saus. (Api masih dan tetep kecil) kemudian aduk rata (jangan terlalu kenceng aduknya nanti tongkolnya ancur).
