- Use 500 gms Surti papdi
- Take 250 gms small brinjal
- Provide 200 gms sweet potatoes
- Take 200 gms purple yam
- You need 2 raw banana

- You need 1cup+¼ cup coriander leaves finely chopped
- Take 1/2 cup crushed peanut
- Take 1/2 cup fresh coconut grated

- Take 1+½ tsp carom seeds
- Prepare 2 tbs coriander powder
- Provide 1/2 tsp turmeric powder
- Take 2 tsp green chilli paste
- You need 2 tsp ginger paste
- You need 2 tsp garlic paste
- You need 1/2 tsp asafoetida
- Provide 1 tsp Garam Masala powder
- Take 1 tsp red chilli powder
- Get 1/2 tsp cinnamon powder
- Get 2 tbsp sugar
- Prepare As per taste salt
- Take 3 tbsp+1tbsp peanut oil
- Get Methi ni bhaji na muthiya (fenugreek leaves fritters)
- Use 1 cup wheat flour
- You need 3/4 cup jowar flour
- Get 3 tbsp chickpeas flour
- Prepare 250 gms fenugreek leaves
- Get 2 tsp crushed peanut
- Use 2 tsp ginger chilli garlic paste
- You need 1/4 tsp turmeric powder
- Provide 1/4 tsp asafoetida
- Get As per taste salt
- Get 1/4 tsp sugar
- Provide as required To fry oil
Steps to make Surti undhiyu:
- Mix all ingredients of muthiya add little water if needed, make ball and fry.
- Mix crushed peanut,sesame, coconut, 1/2 tsp turmeric powder, garlic ginger and chilli paste, red chilli powder garam masala,cinnamonpowder,asafoetida, sugar, salt, carrom seeds 1tsp, coriander powder, green garlic 1cup, coriander leaves 1cup, oil 1tbs. Mix well.
- Take ¼ masala and stuff this mix Masala in brinjal and banana, cut purple yam and sweet potatoes into 1 inch piece and spread ¼ mix masala, remaining spread half masala to papdi.
- Heat oil in deep heavy bottom pan add carom seeds when splutter add half papdi stir for 2 minutes, now make layer of stuff brinjal, sweet potatoes, purple yam cover it with left papdi,add 1/4 cup water and cover it with lid.
- Cook it for 40 minutes at low flame.
- After 40min. add methi muthiya and stuff banana again cover with lid for 10 minutes.
- Garnish it with green garlic and coriander leaves.
