- Wash rice,urad dhal and fenugreek and soak them for 2-3 hours. - Strain the water and grind it to fine batter like idly/ dosa batter. - Add little salt and keep the batter for fermentation for at least 4-5 hours. - After 5 hours the batter is ready to cook.
- Jaggery syrub: In a pan add 1 cup of jaggery 1/2 cup of water,cardamoms and 1/2 tsp of dry ginger powder. Heat the pan to dissolve jaggery. There is no specific syrub consistency needed for paniyaram. When the jaggery is completely dissolve, strain the mixture to remove impurities.Now add required amount of jaggery syrup into the batter. Check the batter taste and add syrup for more sweetness.
- Grease the kuzhi paniyaram pan with ghee and pour the batter. Cover the pan with a lid and let it cook for sometime.
- When the base is cooked well, flip them and cook until golden and cooked inside.
