  2. Prepare 1 cup Gram Flour (Besan)
  3. Take 1/2 cup sooji(Rava)
  4. You need tsp ENO
  5. Get 1/2 tbsp baking soda
  6. Take 1/2 cup curd(khaata)
  7. Prepare To taste Salt
  8. You need 2 green chillies (chopped)
  9. Provide 1/2 cup water
  10. Use For TEMPERING
  11. Take 3 tbsp oil
  12. Provide 2 tsp mustard seeds
  13. Prepare 3 tsp jeera/cumin seeds
  14. Get 2 tsp curry leaves (opstionl)
  15. Use 1 green chilli
  16. Prepare as needed water
  17. Provide 3 tbsp sugar
  18. You need to taste salt
  19. Get 5 tbsp lemon juice
  20. Use For GARNISHING
  21. You need 2 tbsp coriander chopped
Steps to make Khaman:
  1. Firstly, in a large mixing bowl sieve 1½ cup besan and 3 tbsp rava.
  2. Add , 1/2cup curd, 2 chilli, ½ tsp salt, 1 tbsp lemon juice and 1 tbsp oil.
  3. Prepare a smooth batter adding 1 cup of water or as required.
  4. Whisk for 5 minutes or until the batter turns smooth silky consistency.
  5. Rest for 20 minutes, allowing besan to absorb water.
  6. Further again whisk for 2 minutes.
  7. Additionally, add ½ tsp of eno fruit salt. you can alternatively use a pinch of baking soda.
  8. Mix gently till the batter turns frothy.
  9. Transfer to the greased container.
  10. Immediately steam the dhokla batter for 20 minutes on medium flame or till the dhokla gets cooked completely.
  11. Now cool the dhokla for 5 minutes and then unmolded it.
  12. Further, cut the dhokla to the desired shape.
  13. Prepare the tempering by heating 3 tsp oil. add in ½ tsp mustard, ½ tsp jeera.
  14. Also add 2 green chilli, few curry leaves and allow to splutter.
  15. Further add ¼ cup water, 1 tsp sugar and ¼ tsp salt.
  16. Mix and boil the water well.
  17. Add in 1 tsp lemon juice and mix well.
  18. Pour the tempering over dhokla.
  19. Garnish the dhokla with 2 tbsp chopped coriander leaves..
  20. Finally, serve  khaman dhokla.
