The ingredients needed to cook Khaman:
  1. Use For khaman batter
  2. Take 1 cup 100 gm besan approx
  3. Take 1 cup water
  4. Get 1 spoon oil
  5. Use 3/4teaspoon lemon salt
  6. You need 1 tea spoon Eno
  7. Prepare as required Salt
  8. Prepare 3 tea spoon sugar
  9. You need For tempering
  10. Take 3-4 spoon oil
  11. Use 3 green chilli (cut)
  12. Get 1/2 tea spoon hing powder
  13. Get 3-4 tea spoon sugar
  14. Use 2 spoon lemin juice
  15. Take As needed Coriander
  16. Use 2 tea spoon mustard seeds
  17. Use as required curry leaves
Instructions to make Khaman:
  1. Take all ingredients to prepare batter.Mix all ingredients (except Eno).. add water…. avoid lumps. prepare the mixture, the amount of water required depends of the quality of the chickpea flour, so add just enough to make a smooth batter.
  2. Stir well.. mix it well. Batter should not be so thick.
  3. . Pour approx. 2-3 cups water in steamer at bottom and heat it over medium flame. Make sure that steamer is at least 4-5 minutes heated before placing the plate (filled with batter) in it. Grease plates or thalis using 1/2teaspoon oil.
  4. Just before steaming add Eno. This is because the batter will need to be placed into the steamer as soon as the soda starts reacting with the lemon soda. Whisk the mixture in one direction..
  5. . The mixture will become frothy and double in size.
  6. Now pour batter in grease container.. Cover it with a lid and steam khaman for about 15- 20 minutes.
  7. After 15-20 mints insert a toothpick to check if khaman is cooked correctly. It should come out clean.
  8. Let it cool and cut into big pieces
  9. For tempering.. heat a pan with oil in it over medium flame. Once the oil is sufficiently hot, add mustard seeds, hing,curry leaves and green chilli. Add 1/2 cup of water in the pan and allow it to boil. On 2-3 boils, lower the flame and squeeze 1/2 lemon, add 3 spoon sugar and green coriander leaves.
  10. TUrn off the heat and pour the tempering on the dhokla. Tempering should not be too hot.
  11. Let it put aside for 10-15 mints
  12. Khaman is ready
