  1. Use 250 gm boiled chana( chickpeas)

  3. Prepare 1 tsp red chilli powder

  7. Take 2 tsp Coriander leaves

  9. You need 1/2 tsp rai(mustard seeds)
  10. Provide 1/2 tsp fenugreek seeds
  11. Use 4-5 green chilies
  12. Provide 5 tsp mustard oil
Steps to make Jain Achari chana masala:
  1. Toast, grind fennel, mustard seeds and fenugreek seeds and make powder and mix 2tbsp mustard oil in it
  2. Mix 2tbsp of prepared powder with boil chanas and keep aside and cut green chillies in the middle and fill some powder in them and fry and keep aside
  3. Fry cumin seeds after adding the remaining mustard oil to the pan, then reduce the flame and add red chili powder and mango powder and saute for 1 minute.
  4. Finely chop the tomatoes and put them in the pan and cook till the tomatoes are tender, in the meantime add some water too
  5. Mix well with chickpea spices, add it to the chana pan and mix well and cook for 2 to 3 minutes and turn off the gas
  6. Garnish with fried chilies while serving

Store in deep freezer for a longer shelf life. This masala can be stored and used for more than a month even under no. Pour in water along with channa and let them come to a boil.
