The ingredients needed to prepare Ragda-pattice:
- You need For making chatpata chana we need-
- Use 1/2 kg Boiled chickpeas-
- Use 2 medium Finely chopped onions-
- You need 3 large Finely chopped tomatoes-
- Get 1/2 tbsp ginger-garlic paste
- Use 2 tsp red chilli powder
- You need 1/4 tsp turmeric
- Get 1 tsp garam masala
- Get 1 tsp amchur powder / dry mango
- Get 1 tsp black pepper powder
- Take 1 tsp cumin powder
- Take 1/2 tsp cumin seeds
- Get For making pattice we need-
- Prepare 6 large Boiled potatoes-
- You need 1 tbsp cornflour
- Take 1/2 tsp turmeric
- Provide 1 tsp ginger-garlic paste
- Take For garnishing we need
- Take 3 cups curd/yogurt
- Get 2 tbsps powdered sugar
- Prepare 1 cup finely chopped carrot and cabbage
- Take as required Green chutney (coriander and mint)
- You need as needed Imli-jaggery chutney / tamarind chutney
- Provide as needed Water
- Provide as per taste Salt
Instructions to make Ragda-pattice:
- Wash and soak the chickpeas overnight, strain that water and boil them in fresh water without adding salt the next day.
- The chickpeas should be 3/4 th done when you turn-off the gas. In a kadai, add oil and add the cumin seeds. When the cumin seeds start sputtering, add onions and saute on a high flame until they turn light brown. Then add ginger-paste, turmeric, red chilli powder and saute for 2-3mins. Then add the tomatoes, cumin powder, black pepper powder, garam masala and cook for 5-10mins. When the masala starts leaving the oil, add the boiled chickpeas, little water and give it a stir.
- Cover the kadai with a lid and cook for about 5mins. Add salt and aamchur powder, mix properly and remove from heat.
- Take the boiled potatoes and mash them with clean hands. Add the cornflour, ginger-garlic paste, turmeric and salt in it. Apply some oil on your palms, take a small portion of the potato mixture and make a patty or pattice. Shallow fry all the patties and keep them aside. Take curd/yogurt in a bowl, add the finely chopped carrot and cabbage in it, powdered sugar and mix it well. Add more sugar if desired.
- Take a plate, keep 2 pattice, pour the chatpata chana masala over it, then put the curd-carrot-cabbage mixture on top of it and finish it off with some green and imli chutney. Your ragda-pattice is ready to serve and I'm sure everyone in your family will love my #favourite recipe ❤
